With all of the Extra time we had here, our brains kept coming up with new things to bridge the missing delights.

Inspired by little loaded potatoe bites  - no longer served, we decided to upgrade to a delightful, and not at all healthy breakfast sandwich. LOL

This was 100% the creation of my husband Duncan and it was a wonderful Score.

Ingredients:

Hashbrown Patties- Baked until Crispy. (overbaked is better when you layer it)

Bacon - cooked to the crispy side so it breaks in the bite instead of pulling out.

Sour Cream - We usually use light but this was what costco offered.

Grated cheese (we found the fine option was the best) use any flavour -We started with an old light cheddar.  our next try will be jalepeno havarti

Hot Sauce (if you like it) - both tasted awesome to me.
